Ingredients

Hello, good, my people! Today I bring you something simple and nutritious, easy to prepare: a salmon cooked in the pan with butter, accompanied by red rice and chipotle cream that will give the final touch to finish off this dish. Let's start...


  1. We start with the rice. We cut the vegetables into small pieces and put a little oil in a hot pan to fry our vegetables. Once they get a little color, we add the rice so that it browns a little. In a container, we place our powders and purees, along with a cup of water.


  2. We mix everything and add to the pan where we have the rice. We let the mixture cook over high heat and when the sauce reaches the level of the rice, we lower the temperature to the lowest and cover the pan for 10 to 15 minutes. With that, our rice is ready.


  3. For the chipotle cream, we must blend the chipotle chili if it is whole, if not, it will be the chipotle sauce. We bring the heavy cream to a boil, add the chipotle sauce and the spoonful of shrimp broth or whatever you like. We mix and add the flour, stirring until we reach the consistency you like. It's all about adding more flour to make the mixture more solid.


  4. The easiest thing here is to cook the salmon. Season with salt and pepper. Normally I marinate the salmon a day before with serrano peppers and orange, but that is up to taste. Pour a little oil in the pan and put the salmon skin side down. It is cooked on both sides for around 3 minutes or we let it cook depending on how we like to eat it.


  5. We leave the heat at medium temperature and add the butter and spices, and begin to cover them with the already melted butter, and that's it!

Protein

  • 4 pieces of salmon

  • 1/2 cup butter

  • 4 bay leaves

  • 1 pinch of oregano


Cream

  • 10 oz heavy cream

  • 1/3 of a can of chipotle chili

  • 1 oz flour

  • 1 tablespoon shrimp broth


Rice

  • 1 cup of rice

  • 1 can of duck puree

  • 1 "strong" tomato puree

  • 1/2 tablespoon salt

  • 1/2 tablespoon black pepper

  • 1/2 tablespoon tomato broth

  • 1/6 of a white onion

  • 2 tomatoes

  • 1 clove garlic

  • 1 jalapeño or serrano
